called "Swissing" to make it tender - Beaten with a mallet and braised for a long period.
Avoid the Round Steaks available in most markets already cut to ½ inch thick. You
WANT to buy the ¾ inch thick Top Round Steak and pound it to ½ inch pieces for the
correct texture & tenderness. The difference IS INDEED noticeable.
