The Hawaiian Islands and the Philippines, both as major stops
for early Pacific Ocean Ship traffic, contain a wonderful
mixture of world-wide cuisines. Hawaiian cuisine is about
much more than their delicious local dishes. Their rich culture,
unique cooking methods and respect for native ingredients
with influences from other Asian cultures through the decades
have created a spirit of generosity that's intrinsic to the
islands unique flavors and foods. The food of the Philippines, a
dense cluster of 7,000-plus islands, is uniquely odd. A cuisine
that doesn't quite resemble, in elements, execution, or
intention, anything else in all of Southeastern Asia.
