DOUGHS, DUMPLINGS, NOODLES & SOUPS
DOUGHS are thick and plastic and may be shaped, kneaded, and
rolled. They are elastic, allowing much expansion during baking, the
degree of elasticity depending upon the amount of elastic protein, or
gluten, provided by the flour employed. People in English speaking
countries use the words Dough and Batter to describe different
things. Doughs are a mixture mainly consisting of flour and are
therefore malleable and can be kneaded with your bare hands on a
work surface. Batters are usually thinner, more liquidy, and are mixed
with an electric mixer or hand mixer in a bowl. Technically, Cookies
are indeed a thick Dough, but are found in the “Breads” Section.
NOODLES are a type of food made from unleavened Doughs which are
either rolled flat and cut, stretched, or extruded, into long strips or
strings. Noodles are a staple food in many cultures and made into an
impressively huge variety of shapes & sizes. Many are comercially
dried, boxed and sold in stores.
