Pork ("The other white Meat") is the culinary name for the meat of a domestic
pig (Sus scrofa domesticus). It is the most commonly consumed meat in the
entire world (36%), yes, beating out even Poultry (33%). There is evidence of
pig husbandry dating back to 5000 BC. Pork is eaten both freshly cooked and
preserved. Curing extends the shelf life of the Pork products. Ham, Smoked
Pork, Gammon, Bacon and Sausage are examples of preserved Pork. Some
religions and cultures prohibit Pork consumption, notably Islam and Judaism.
There are NO USDA “grades” of Pork. Your determining factor will only be
price and whether or not your preferred cut of Pork is Hormone Free.
