Pork,"The other White Meat", is the culinary name for the meat of a domestic
pig (Sus scrofa domesticus). It is the most commonly consumed meat in the
entire world (36%), yes, beating out even Poultry (33%). There is hard
evidence of pig husbandry dating back to 5000 BC. Pork is eaten both freshly
cooked and preserved. Curing extends the shelf life of the Pork products.
Ham, Smoked Pork, Gammon, Bacon and Sausage are examples of preserved
Pork. Some religions and cultures prohibit Pork consumption, notably Islam
and Judaism. There are NO USDA “grades” of Pork. Your determining factor
will only be price and whether or not your preferred cut of Pork is Hormone
Free. During the past 40 years, Trichinosis in the United States is extremely
rare and most often occurs as outbreaks involving a few to dozens of persons
who consumed portions of contaminated meat from the same animal,
usually a Wild Boar or a Bear. Historically, eating undercooked commercial
Pork was a risk, but medium cooked Pork has proven to be safe.
